St. Patrick's Day Dessert



I saw this simple dessert on a website I was looking at earlier today. Although I'm not a fan of Oreo cookies---I know--gasp! It does look like something easy that my family would enjoy. :)

Tonight Amy and I made some green shamrock shaped pancakes. Well, they were supposed to look like shamrocks, but it was pretty hard to get the batter to actually pour & go like we wanted it to. We had fun anyway.

I think I'm going to give Ryan and Amy a green lunch on Tuesday. Cucumber slices, green beans (they love them raw, like I do), celery, green grapes, and some Granny Smith apple slices. Maybe I'll give them lightly colored green water?
Ryan has been asking me to cook corned beef for quite a while now. It usually goes on sale for St. Patty's day, so I'll have to pick some up tomorrow, & serve it with some cooked cabbage.
What plans or traditions do you have for St. Patrick's day?

Amy's been letting her creative juices flow, & made Leprechaun trap the other day. I'm not sure where it is at the moment, or I'd post a picture. I guess I'm going to have to get more into this 'holiday' than I was planning to. ha

Hee hee - these are great. Why not have green eggs and ham while you're at it?

great ideas! I need to read up on the whole St. Patty holiday.... didn't know about the leprachaun(sp?) traps! That would be something fun for preschool!!

MMMMM!corned beef!! that sounds so yummy!

I just unpacked the pantry yesterday and came across a can of corned beef. Thanks for the reminder that it goes with the holiday!

Your school lunch sounds great. You are way more fun than me. Maybe I'll do the green egg thing tomorrow, although I don't think I could bring myself to eat it.

I've never heard of corned beef or what ever it is that Ryan asked for. It sounds gross. What is it?
